What connects to the bottom of the charcoal canister on a 78?  Also what is a good source of replacement hoses for the canisters connectivity?

I don't think there's anything connected to the bottom of the canister...it should just be open, with a "filter" of foam rubber type material...
Just about any of the Corvette parts vendors will have the correct hoses, or you can replace them with regular hose from the parts house, if you're not going the "full resto" route.
