I went to get my 75's timing checked. But the timing degree indicator is not there, what can I do now?

If you are talking about the tab that attaches to the timming chain cover, you can buy a replacement that bolts directly to the cover.

time it by non ported vacuum (intake vacuum)
when the vacuum is peak leave it there.

Thanks Guys. ? When the vac is peak- What rpm? or just idle.

It's at peak when the Inches of Mercury on a Vacuum meter connected with the intake manifold pressure is the highest STABLE on the guage, while the engine is idling. Of course, natural instinct says that non-stock cams will alter the field of play on that, but I could be dead wrong.
