The '78 I bought came with new weatherstripping but no instructions. Do the old one just pull out and the new ones pop in ? What is the correct/best way to do this?

The are held with a combination of adhesive and clips. The clips pull out. The adhesive is easest to release by using a heat gun. Heat the old strips and pull gently and slowly. Clean it all up and use new adhesive, 3M Weatherstrip adhesive.

3M makes a product to remove the old adhesive. try it in a small hidden area first to make sure it won't affect your paint job. You may then find it easiest when installing the new weatherstrip to mask off the areas you don't want any adhesive. It's then a simple matter of following the directions on the tube of adhesive, apply to both parts, remove the masking tape, and press the new stuff in place. The installation goes best if the weatherstrip is a little warm, like maybe leave it in the sun for a while prior to installation.
