Has anybody changed the vacuum hose with the special fitting that plugs into the valves on top of canister? Can I pull the vacuum hose out of the fittings and re-use the fittings on new hoses? Can I eliminate tha fitting all together and just connect vacuum hoses directly to valves?

The hoses are glued into the formed fittings...really rare to get the hose out without damage. If all you are doing is replacing the vacuum hoses due to damage, you can slice the hose off right at the fitting, then use a vacuum hose barb/junction to connect the new hose to the old fitting.
